Anonymous asked: what kind of restaurant do you want?

a lot of my friends accuse me of being pretty wanky when it comes to dining so they assume I’ll have a fine dining restaurant like Quay or Becasse. In a way, my dream started off as that. But what I would really like it a hearty restaurant, nothing too big or flashy, somewhere that people talk about because of the family-feel (not atmosphere, not like Sizzlers or an RSL), they talk about how suave the decoration is, how generous the servings are, how high the quality of my products are, how it’s just a bloody good time that can make them forget the woes of the week. Every thing can be cured with good food and love. That’s my purpose. That’s my restaurant.

I guess you could describe it as almost a bistro-style place. I definitely want to serve things you’d find in a fine-dining establishment… but realistically my kind of place is more like those restaurants you get in the Hunter Valley.

My dream restaurant, and the restaurant I’m working towards, will be on site or close to the source of my ingredients. Personally I’d like to start a restaurant that’s accessible to city people but has its own herb garden, vegetable patch, etc. May not have animals there haha, but certainly produce we can use day in and day out right behind the kitchen.
